Handle null consent date properties on a participant when calculating days in study

We need to handle the case of participants not having consent dates. This is required because sometimes dates cannot be shared due to personal information regulations.

When we do not have a consent date, the number of days in study is equal to the maximum "day" property value of the participant's subject day data documents.
