parachain example: migrate to `assethub` and use `pallet-nfts` #1809

The parachain example is using a deprecated pallet-uniques which should be replaced by pallet-nfts

In the same manner it would be good to migrate to assethub as well instead of statemint, to prepare for the plaza transition
