I would think accidentals are already pretty intuitive to add (hovering over the accidentals in the notation toolbar shows you the shortcut keys you can use too).
I could see a case for some sort of modifier key + drag causing a note to move up and down chromatically rather than diatonically, but I certainly wouldn't want it to be the default, and I'm not sure it would generally produce the result you expect much of the time. Then of course someone will ask for microtonal dragging...
It might be guessed that the current dragging precision for notes is half of the distance between staff lines.
For accidentals this precision ought to be increased by at least a factor of 2.
Quarter of a distance between staff lines deems to be too small for comfortable editing.

You can use down and up keys and I rarely use the mouse for dragging notes on the score.
Your idea
When clicking to add a note, dragging up/down before you release the mouse should sharpen/flatten it.
