How much work would it be porting this to a different board?

I'm struggling a bit to understand what bits are ESP32 related

I was wondering if running this on something like the BangleJS would be a major undertaking, or just a matter of tweaking some files.

I think the guy behind the Bangle, Gordon Williams, is the guy behind Espruino :)

EDIT: There is also an ESP based watch - Lilygo TTGO T-Watch-2020 which has an Espruino port.

Which would probably be a more "realistic" target, but I think interop with the Bangle stuff might complicated life
