Review our language around gender

We welcome ideas for how we could overcome the limitations of this project re 'gender', such as:

• how we operationalize gender based on the tools we use (e.g., we're assuming binary gender classes because the tool we're using, the Gender API, has binary gender classes)
• the language we use to talk about gender in our documentation and issues

or any other problems that you see! Please be kind in your suggestions; we're all learning 💖

This could be accomplished with comments on this issue (simplest way), but if you want to gain experience using git/GitHub, then you could make changes to the files you feel need changing, and submit a pull request.
