Not clear way on how to setup the ServiceName for Zipkin traces #381

I'm trying to configure tracing via Zipkin, and all the traces have their "ServiceName" set to ambassador-<k8s namespace>. I'd want to set it to a custom value, but I've been unable to find a way in the official docs.
