running multiple instances to update some containers while just monitoring the rest?

Here's my current watchtower config:

As you can see I'm just monitoring all containers, checking twice a day for updates and sending an email notification when an update is found.

I now have a need to auto update (and clean up images/volumes) on some containers while still just monitoring the others.

I assume I should use multiple instances to do this? If so, would this work?

Does it work correctly? If yes, you just have to add the right scope on each container ?

I wasn't able to get multiple instances to work the way I wanted, but I was able to do it with one instance setup to update by default, with monitor-only tag used on the containers I don't wan't to auto-update.
