In the docs it says:

gravity init mymoniker --chain-id gravity-bridge-2

What is mymoniker? Should it be unique per validator? Should it be unique globally among all validators? What if it's not unique? Will this cause a problem?

A moniker is a name for Validator and it is not unique. But you should make it unique because if not, you would be impersonating another person. Most are creating a brand around there moniker name. My moniker is SkyNet | Validators and I have built my brand around it.
